Once upon a time, I was called upon to grill up some steaks with no time to prepare. With the limited ingredients I had on hand, I randomly picked out some stuff that I thought would taste good together and hoped for the best. I ended up with some of the best steak I've ever had. Since then I've had time to refine the ingredients and perfect the proportions. Now I pass it on to you.
Ingredients:
-3 Tbsp Ketchup
-1 1/2 Tbsp Mustard
-2 tsp Worcestershire
-1 tsp Soy Sauce
-1/2 tsp Ground Ginger
-1 pinch Ground Black Pepper
-1 pinch Ground Cayenne Pepper
-1 pinch Italian Seasoning
Let me start by saying that I'm not particularly crazy about ketchup. Something about its flavor has always just bugged me. I also do not like sweet steaks in general. The Jack Daniel's menu at TGI Friday's actually makes me nauseous. Despite these factors, this is one of my favorite steak glazes in the world. So don't discount it just because you don't like the ingredients.
Ok, onto the recipe. Get out a small bowl. In it, mix the ketchup and mustard. Then add the Worcestershire and soy. Finally, add the ginger, black pepper, cayenne pepper, and Italian seasoning. When I say a pinch, I mean a pretty generous pinch, so don't be afraid of grabbing too much. That's it really.
Works great as a glaze to be brushed on when the steak's nearly done cooking or even as a dipping sauce. If you don't have all the ingredients, it's ok. As long as you have the ketchup, mustard, and either soy or Worcestershire, it'll be alright. That's why it's called Emergency Steak Glaze.
