Pineapple Upside-Down Printable Recipe

This is my mom's recipe, she made it and my sister took pictures.

This recipe does not use any dairy or eggs, these ingredients make enough for 2 cakes.

Ingredients:
-1 box of Golden Cake Mix
-1/3 cup of Oil
-1/8 cup of Rum
-1 cup Water
-Crushed Pineapple
-Brown Sugar
-Fleischmann's Margarine
-3/4 cup of Almond Tofu

You will also need:
- Two 9 inch round cake pans



1. Lightly butter the pan, to reduce sticking.


2. Put a layer of pineapple on the bottom of the pan, so that it covers the whole thing.


3. Add a layer of brown sugar on top of the pineapple so that it covers it.


4. Make the cake mix using 1/3 cup of oil, 1/8 cup of rum, 1 cup of water, 3/4 cup almond tofu. (The liquid has to be slightly decreased from the cake mix instructions or the cake will turn out like pudding.)


5. Pour the cake mix into the pans.


6. Bake according to the instructions that came with the cake mix.

Oh man, this stuff is seriously so good. I couldn't believe it was dairy-free the first time I tried it.
